Stir-fried Shrimp and Veggies


Ingredients:

Large shrimp peeled and deveined

Olive oil

Sea salt

Black pepper

Red pepper flakes (optional)


Preheat the skillet or wok with two tablespoons of olive oil. When hot, add shrimp, sea salt, black pepper, and sear on both sides. Flipping once after three minutes. Remove the shrimp to a plate and add two tablespoons of olive oil. When hot, add chopped up veggies of choice and stir-fry until tender. Add the cooked shrimp back to the pan and mix it with the veggies. Sprinkle with red pepper flakes for a bit of spice. Enjoy! Note: You can also serve this over a quarter cup of brown rice.
